Chilean cuisine is as varied as the terrain of the country itself. The breads of Chile are celebrated for their diversity of shape, flavor, and texture. Dobladitas are a Chilean quick bread, rolled out, cut into circles, and folded in layers before baking. They are tender and flaky when served warm out of the oven.
Spread your bread with the earthy flavors of the Italian countryside. Cream cheese, garlic, artichoke hearts, olives, green onions, sun-dried tomatoes, parsley and chives all converge to make a rich and colorful appetizer.
I made up this recipe because my hubby wanted to try a lasagna made with lobster meat. I combine tender steamed Maine lobster chunks in between pasta, jarred or homemade Alfredo Sauce and fresh spinach and ricotta, Cheddar and Parmesan cheeses. Serve with a tossed garden salad and oven toasted garlic bread.
The Greeks know how to make heavenly chicken. The fresh lemon juice in the marinade makes the chicken moist, and the fresh herbs - rosemary, thyme, and oregano - make it flavorful. The garlic adds a bit of bite.
